Po\u00ealez-les 30 s de chaque c\u00f4t\u00e9 dans une po\u00eale chaude avec de l\u2019huile d\u2019olive. R\u00e9servez 1 h au frais.<\/li>\n\n<li>Taillez-les en tranches de 5 mm d\u2019\u00e9paisseur.<\/li>\n\n<li>Disposez le poisson dans un plat, ajoutez 100 g de physalis coup\u00e9s en deux, des lamelles d\u2019oignon rouge et de poivron rouge. Ajoutez des feuilles de coriandre, de la fleur de sel, une pinc\u00e9e de piment d\u2019Espelette et le zeste de 1 lime (ou 1 citron vert).<\/li>\n\n<li>Pour le leche de tigre, mixez 100 g de fumet de poisson froid, 50 g de lait de coco, 12 feuilles de coriandre, 1\/2 gousse d\u2019ail, le jus de 2 citrons verts, 1\/2 oignon rouge, du sel, 1 pinc\u00e9e de piment d\u2019Espelette et 2 c. \u00e0 s. d\u2019huile d\u2019olive.
